Deus Ex - Working your way up from the bowels of an unknown prison only to realise it's the basement of the people you were working for!
Half-Life - Exploding the casserole in the microwave (which links to half-life 2 ep. 2 - Being told you'll be forgiven for it if you can accomplish a certain task!), also trying to figure out what the G-Man is up to.
Splinter Cell - The shadows move over me! They realistically move over me! I'm gonna sit and watch this for hours!
Creatures 2 - Woah! Check out those torture scenes, are you sure this is 8-bit? (C64)
Broken Sword - visiting the charming McDevitt's pub in Ireland
Oblivion - THAT moment when you first come out of the sewers...
Burnout 2 - the crash junctions were seen for the first time! Awesome!
Hitman 2 - the first time I ever saw relastic physics beign implemented in a game, from the ragdolls to the moving curtain in the confessional booth.
San Andreas - Being told to "Press B to open your parachute" after leaping from a jet over the Las Venturas strip
Dead Rising - The mindblowing cut scenes, especially the one where the clown is introduced.
Halo 3 - Too many multiplayer moments to mention. Legendary team work. Coming first in a Slayer free for all ranked for the first time.
Brothers in Arms Earned in Blood - completing a tour of duty without dying in split screen with my brother
Worms - Throwing a banana bomb the full width of the playing field and landing it straight down my opponents freshly drilled shaft on top of his worm when we were both very tired at 3am and just couldn't stop playing about ten years ago!
Condemned - your first face-to-pipe combat scene where you actually feel like you're about to get beaten to death
World in Conflict - dropping your first nuke in multiplayer
Football manager 2007 - getting Woking promoted 3 seasons in a row
Colin McRae Rally 2005 - the immersion, damage and control model left me awestruck for a long time
Assassin's Creed - realising you in fact CAN climb that huge tower all the way to the top, and witnessing the amazing scene laid out in front of you afterwards, also the amazing combat

The Witcher is excellent, I'm also surprised at how well it runs given all that can be happening.
